    Although the instructions he gives says to not use organic milk, he is wrong about that. Organic whole milk works fine.

    Also the kefir grains will grow rather quickly (doubling every 4-7 days.) I have been giving extra grains to friends and family - but even so I now have 7 batches going. I'm taking some to my son in CA.

    I was not sure how fast they grow. I put an order for 2 in, one for me and one for my wife. Should I have just ordered one?

    Do you use the siphoned milk to make smoothies or drink it straight?

    Yeah, I ordered two as well and gave half to my son and daughter-in-law. Since then my half has increased about 8x times in a couple of months.

    We use about 1 to 1-1/2 cups of kefir (the strained fermented milk) in our nightly smoothies along with organic frozen and fresh fruits, organic fruit juice, flax seed, shredded coconut and crushed iced. We used to buy and use greek yogurt, but the kefir has replaced that.

    The really nice thing about kefir is that it contains about 30-50 strains of good bacteria and will help populate your gut, unlike yogurt, store-bought kefir and probiotic pills which just give a temporary boost. Here's a few links:

    Also, kefir has a yeasty smell and tart-to-sour taste, depending on how long you let it ferment (the longer you do, the more tart it becomes.)
