I have seen some shops that will close for a week or two at certain times of the year for vacation. All staff is told that is the time to use it, or lose it.
Some are willing to use a temp, and I have offered this service as well.
Others just "get by." They book a bit lighter, and shuffle staff to make sure all bases are covered.

We shuffle, at least those of us that actually dont get vacation.
I am by myself and have reliable help 2 days a week. What is this vacation thing you speak of?
We shuffle, we are cross trained, and sometimes several leave if the dr is out of the office. We do not close.
I've been an optician for thirteen years now and never once a vacation. No one gets vacation. This is not an issue.
The main reason I work is for the reward of vacation/time off to spend w/my family. I expect my employees to have a similar mind-set.
We have floaters that cover for vacations. Some of my staff take more than 5 weeks off per year, but most, depending on time in service, are paid for 3 weeks or less.

I have been on vacation since 2002. As you can see vacation is a lot of work; ya gotta clean em, fillet em and smoke em.
