"Flatten the curve" used to mean an attempt to extend the period of the population's infection in order to keep it from being too acute, in order to be able to provide whatever care was possible. The phrase is now used haphazardly, and you should specify exactly what you mean by saying that.
Telehealth has lots of components, but ultimately in your context it comes down remote examination, which is currently very poor. The basic components of a medical encounter are history, exam, and medical decision making, two of which can easily be done remotely. But if one wants good medical care, the examination portion can't be skipped or minimized, because it's a necessity.
