With all the different ways to surface a lens, where can I get information to describe the different procedures.

Most companies who offer digital/ freeform surfacing will offer education on what makes it better than conventional processing. In a nutshell, it all comes down to programming in combination with diamond bit grinding. The diamond bit is more precise and the programming will generally involve compensating the prescription to better fit the patient in their frame of choice. This takes in to account panto, vertex, and base curve of the frame. The result will be lesser distortion on the peripheral as well as in depth perception.
