Non-competes are very difficult to enforce. They are usually all bark and no bite.

I have never heard of an optician being restricted from earning a living by a non-compete contract. I don't thinkit's worth the paper it's written on but I ain't no lawyer.
That is what makes it impossible to enforce. No court will stop anyone from practicing in their profession. You can usually stop them from soliciting from your established customers.

Depends on the size of the city. A non-compete can stand up if it is limited in radius, say 5 miles of the former employer. Certainly on non-transferral of customer/patient information.
But enforcing/breaking non-competes requires pretty deep pockets, IMO.
