What purpose do those two pins serve that one
places the lense against on either side of
    the stop?

    Lightbulb

It keeps the lens from tilting forward or back.

The pins to either side of the lens stop are designed to allow you to measure the cylinder axis. They were intended for you to place the cutting line of a lens against to measure its cylinder axis without parallax error. They don't serve much purpose today -- other than maybe for progressive lenses, which have a horizontal reference line.

    Best regards,
    Darryl
