    Favorite Recipes..

    Hey Fellow Optiboarders!

    I have company in the house for the next week and a half. Right now, I'm the only female in a house full of men....ugh. haha.

    Anyway, thought I'd get some new ideas for dinner meals. So far I have cooked southern fried chicken(by request) and chicken tacos(mmmm...) Tonight I had planned to cook onion pork chops.

    So if you would be so kind, please share your own favorite recipes. I'll try and add some of my own in just a bit.

    tequila lime marinated Chicken and Steak fajitas are really nice. I just cut the meat into strips, tenderize with a needler, throw some salt, pepper, garlic powder and onion powder on, then put into baggie with tequila and lime juice and a little bit of oil. I usually let them sit for a couple of hours, then I've either grilled on a grill or done on cast iron griddle. Serve with grilled pepper and onion, sour cream, some guacamole, flour tortillas, and we really like fresh pico de gallo. Or you can serve over rice if you don't want to do the tortilla shells.

    I like the Hormel boneless pork loin roasts that come in several flavors. I remove the shine then truss it to keep the shape and juices, brown on a skillet and roast about 50 minutes. Start some potatoes baking about half an hour before roasting. Serve with salad or veggie.

    mmmm....

    We've done pork loin before, but not like that. I usually wrap it up in some foil with the spices, oil, onions, and peppers. But I need to try it your way too now!

    Also, another good one is Tyler's Ultimate recipe on FoodNetwork.com for meat loaf. It's free form (who knew there was digital meat loaf :P), not in a loaf pan but done on a cookie sheet, and wrapped in bacon. Make that with some garlic mashed potato and some sauteed spinach, and you'll have some happy men.


    YOu could also do make your own pizzas. Or Angel hair pasta with some sauteed mixed veggies and shrimp with a white wine sauce. Or an all time favorite in my house hold. --> BREAKFAST FOR DINNER.

    I could go on and on, but I must stop before I start chewing on the computer screen.

    My fiancee and I were just talking that we'd like to make home-made pizza this next week. Then I found a recipe for cheese stuffed bacon wrapped chicken and I almost passed out.

    I don't think bite marks on computer screens fall under warranty. lol. Thanks!

    Kmarshall, if you want recipes try tasteofhome.com or thegutsygourmet.net. The gutsygourmet has recipes broken down to nationalities and regional. Have tried several and all are good. Since he and I are Armenian, I have tried several from the Armenian and Turkish tabs.
