Same here....but most of you know what I do...*shrug*
The definition of a niche product is a product whose "audience" is small but still underserviced or totally ignored. It can be an outlier of a broader product line or it could be an entirely new product. I've been lucky to have found several over the course of 37 years in the business.
For me, the main factor is keeping your position in that market. If the market is large enough, it will attract the attention of other competitors. If it is too small, you will go hungry. It takes time and money (lots and lots of money) to develop a niche market.

I have one too. It's fun, it's exciting, it's profitable and at times it drives me up the wall. Whatever you choose, make sure that it's at least fun.
Niche Markets:
-Luxury
-Medicaid Only
-Small markets
I know of many opticians that have opticals in "niche" markets, but they are not all necessarily profitable. Some tell me they do quite well with low vision aids, but after reviewing the books of two business that were heavy into them, I was far from impressed.

Actually being an optician or contact lens technician or ocularist was a niche market until some idiot told the OMD's there was money in it. Then the OMD"s, chains, mail-order, discount houses, on line places and various levels of retailer's jumped in an ruined the market for almost everyone.
Now to survive you practicly have to have a prescriber owning the place.

Pediatrics, but only if you are in a larger city market, and "market" your office heavily with ODs and especially MDs.

So-o-o... open a short-term 'condensed' private opticianry school and start 'training' future opticians. It's a no-brainer! Talk about an under-served niche market. But only if you have the talent, bucks and cojonies (sp?).
